Ingredients

  • Cake
  • 200 gr Almond flour

  • 70 gr Powdered Monk Fruit Sweetener

  • 2 Eggs

  • 50 gr Sour cream

  • 4 tbsp Melted butter

  • 2 tsp Baking powder

  • 1 tbsp Vanilla extract

  • 100 gr Fresh blueberries

  • Icing
  • 100 gr Powdered Monk Fruit Sweetener

  • 3-4 tbsp Lemon juice

Directions

  • Preheat the oven to 350F.
  • In a medium bowl mix the dry ingredients – almond flour, powdered Monk Fruit Sweetener and baking powder. Mix well.
  • In a separate bowl whisk the wet ingredients – eggs, melted butter, sour cream and vanilla extract.
  • Add the wet ingredients to the dry ingredients and once fully incorporated add the fresh blueberries. Mix well.
  • Once the mixture is ready, transfer to a cake baking sheet and bake at 350F for 45-50 minutes.
  • In the meantime prepare the icing. In a small bowl mix the powdered Monk Fruit Sweetener with the lemon juice. Whisk energetically until fully incorporated.
