Ingredients

  • 80 gr Coconut flour

  • 100 gr Erythritol

  • 1 tsp Baking powder

  • 120 gr Cream cheese

  • 60 gr Soft butter

  • 4 Eggs

  • 80 ml Heavy cream

  • 1 tbsp Lemon zest

  • 1 tbsp Vanilla extract

  • 50 gr Coconut chips

  • Almond butter for garnish

Directions

  • Preheat the oven to 350F degrees and prepare a rectangular baking tray.
  • Gradually mix the ingredients in a large bowl. First mix the cream cheese, soft butter, erythritol, and mix with a hand mixer until fully incorporated.
  • Add the eggs, vanilla, lemon zest, and heavy cream to the mixture. Mix again with the hand mixer.
  • Add the dry ingredients – coconut flour, baking powder and fold using a silicone spatula until fully incorporated and soft.
  • Once the mixture is ready, pour into the baking tray and sprinkle the coconut chips on top.
  • Bake at 350 F degrees for 25-30 minutes. Once the cake is ready, let cool off completely and take it out of the tray.
  • Serve the coconut dessert sliced and drizzled with almond butter.christmas keto cake
