Ingredients

  • Cake
  • 40 gr Coconut flour

  • 30 gr Unsweetened cocoa powder

  • 50 gr Erythritol

  • 2 Eggs

  • 200 ml Coconut cream

  • 2 tsp Baking powder

  • 1 tbsp Vanilla extract

  • Chocolate Gaze
  • 60 gr Unsweetened chocolate paste

  • 60 gr Coconut cream

  • Coconut chips for decoration

Directions

  • Preheat the oven to 340F.
  • In a big bowl mix the dry ingredients – coconut flour, unsweetened cocoa powder and baking powder. Mix well.
  • Use a hand mixer to mix the eggs with the erythritol. Add the dry ingredients and mix again.
  • Lastly, add the coconut cream and vanilla extract until a soft, shiny chocolate mixture is achieved.
  • Transfer onto a baking sheet and bake at 340F for 50 minutes. 6. Prepare the glaze by mixing the melted chocolate paste with the warm coconut cream. Mix until the chocolate mixture is like a glaze.
  • Let the cake cool off on a baking rack and drizzle with the chocolate glaze. You can serve with the coconut chips.keto double chocolate cake
