Ingredients

  • 16 slices bacon, halved

  • 1 tbsp. whole milk

  • 1 tbsp. butter

  • sea salt

  • black pepper

  • 2 tbsp. chopped chives

  • 150 g shredded cheddar

  • 1 avocado, sliced

  • sweet chili sauce, for serving

Directions

  • Preheat the oven to 200 F
  • Line a large rimmed baking sheet with foil. Make a bacon weave with 8 halves of
    bacon each, creating a square. Repeat 3 times and season with pepper.
    Bake until bacon is mostly crispy, 30 to 35 minutes.
  • Meanwhile, make scrambled eggs: In a medium bowl, whisk together eggs with milk.
  • In a medium nonstick skillet over medium-low heat, melt butter. Pour in the egg
    mixture and make scrambled eggs. Season with salt, fold in chives and remove from
    heat.
  • On a serving platter, top the bacon taco shells with scrambled eggs. Sprinkle each
    with cheddar, add a few slices of avocado, and top with sweet chili sauce.keto bacon breakfast tacos
