Ingredients

  • 200 gr Unsweetened desiccated coconut

  • 160 gr Almond flour

  • 2 Large eggs

  • 100 gr Erythritol

  • 90 gr Coconut oil

  • 100 gr Unsweetened chocolate chips

  • 1 tbsp Vanilla extract

  • 3 tsp unsweetened desiccated coconut

Directions

  • Preheat the oven to 180°C. Lay a cookie sheet with baking paper. Set aside.
  • In a large bowl, beat the eggs with erythritol. We add the coconut oil and mix well.
  • Add the dry ingredients – unsweetened desiccated coconut, almond flour,
    unsweetened chocolate chips and vanilla extract.
  • From the mixture with a spoon form 10 large cookies and sprinkle with unsweetened
    desiccated coconut.
  • Place each cookie on the baking paper. Bake at 180°C for 18-23 minutes or until the sides and top are golden-brown. Cool down on the cookie sheet for 20 minutes, they will harden slightly when cooling down. Serve with coffee or tea!keto chocolate coconut cookies
