Ingredients

  • 4 Eggs

  • Salt to Taste

  • 1 Italian Sausage

  • 2 Tsp Olive Oil

  • 1/4 Red Onion

  • 1/2 Cup Spinach

  • 1/2 Feta Cheese

  • 8 oz Cherry Tomatoes

Directions

  • Whisk the eggs and add Salt and Pepper to taste, set aside.
  • Chop the red onion and cut the Italian sausage
  • On a skillet, add the olive oil and sauté the onion with the sausage
    saute sausage and onion
  • On an oven-proof cast iron skillet add oil to the bottom so it won’t stick, add the eggs and add the sausage and onion mixture on top
