Once again, we present a keto pasta without the carb overload! Behold, this delicious dish is made with asparagus! What vegetable can’t be turned into noodles?! We are especially a fan of the tagliatelle pasta. With its flat large noddle shape, it is excellent for capturing every drop of our tangy blue cheese homemade sauce.

Ingredients

  • 600 gr Fresh asparagus

  • 40 gr Butter

  • 20 ml Lemon juice

  • 1/2 tsp Salt

  • Roasted pecans for garnish

  • Sauce
  • 100 gr Blue cheese

  • 100 gr Cream cheese

  • 30 gr Butter

  • 1 tsp Dried oregano

Directions

  • Remove the stalk from the asparagus and slice into thin slices with the help of a julienne peeler.
  • Heat water in a casserole, add the butter, lemon juice and salt.
  • Once the water boils add the asparagus slices and cook for 10-12 minutes. Drain the water and prepare for serving.
  • In the meantime prepare the blue cheese sauce. In a small casserole heat the blue cheese, once it has melted add the cream cheese, butter and dried oregano. Cook on medium heat, stirring occasionally without letting it boil.
  • Serve the asparagus pasta with the blue cheese sauce. Garnish with the roasted pecans and enjoy.keto-pasta-tagliatelle-asparagus
