Ingredients

  • 2 cups baby spinach, loosely packed

  • 2 cloves garlic

  • 1/2 teaspoon salt

  • 1/4 cup walnuts, toasted

  • 1/2 cup Parmesan cheese, grated (fresh preferred)

  • 1/4 cup olive oil

  • 1 lb tilapia filets

Directions

  • Preheat oven to 350 degrees F.
  • In a food processor add garlic and walnuts and pulse. Then add in the spinach, salt, cheese and olive oil. Process until it all comes together.
  • Spray a baking dish with cooking spray and layout your tilapia filets. Take a paper towel and dry off the filets. Spread the pesto over the filets. I only used half of the pesto to make 4 filets.
  • Place in the oven and bake for 12 minutes. Then set under the broiler for 3 minutes or until bubbly and a little browned.
  • Serve immediately.
