Overnight oats and pudding have quickly become a trending breakfast and morning snack. Why? Well you don’t have to do much prep and its ready for you to grab and go in the morning! This overnight keto chia pudding is packed with flavor and substance to kick start your day. Although rather small, chia seeds are packed with nutrition. One tablespoon of chia seeds has 4 grams of fiber , 2 grams of protein and the main fat is omega-3s.

Need some extra protein? Stir in a scoop of your favorite protein powder! You can top your chia pudding with toasted coconut, raspberries, blueberries, or bananas. This recipe is for one serving, but you can prep breakfast for up to five days! Just make sure to add your toppings right before you dive in. Enjoy!

Ingredients

  • 1 Cup unsweetened coconut milk

  • 3 tbsp chia seeds

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/16 tsp salt

  • 1 tbsp maple syrup or honey (or sub stevia)

Directions

  • Mix all ingredients in a small bowl until fully combined. Cover. Refrigerate overnight.
  • Stir before serving. Top with toasted coconut, mixed berries or bananas
