This overnight keto chia pudding is packed with flavor and substance to kick start your day. Although rather small, chia seeds are packed with nutrition. One tablespoon of chia seeds has 4 grams of fiber , 2 grams of protein and the main fat is omega-3s.
Need some extra protein? Stir in a scoop of your favorite protein powder! You can top your chia pudding with toasted coconut, raspberries, blueberries, or bananas. This recipe is for one serving, but you can prep breakfast for up to five days! Just make sure to add your toppings right before you dive in. Enjoy!
1 Cup unsweetened coconut milk
3 tbsp chia seeds
1 tsp vanilla extract
1/2 tsp cinnamon
1/16 tsp salt
