Our keto turkey soup is the solution for all that leftover turkey! Our Keto Roasted Turkey is a nice meal for the family to enjoy, but this recipe is an excellent follow up. This soup will take about 30 mins to make and does not require much effort. Packed with flavor but guilt free. Enjoy this with your family without spending more than $10

Ingredients

  • 2 tbsp Olive oil

  • 1 Yellow onion

  • 2 cloves Garlic

  • 1 Green pepper

  • 350 gr Leftover cooked turkey

  • 650 ml Coconut milk

  • 500 ml Warm water

  • 250 gr Asparagus

  • 1 tsp Cumin

  • 1 tsp Salt

  • Garnish
  • Chopped parsley

  • Fresh lime slices

Directions

  • Heat the olive oil in a large pot. Add the onion, garlic and chopped green pepper. Cover and cook until the onion becomes translucent.
  • Add the cooked turkey, cumin and salt to the veggies. Stir and cook until the meat is ready, about 4-5 minutes.
  • Add the coconut milk and warm water to the meat and allow it to boil. Reduce heat and let simmer for about 20 minutes.
  • Once the soup is ready add the chopped asparagus and cook for an additional 10 minutes. Remove from heat.
  • Serve the soup hot, garnished with chopped fresh parsley and a lime slice.keto turkey soup
