Ingredients

  • Sponge Cake Mix
  • 30 gr Coconut flour

  • 3 Eggs

  • 50 gr Erythritol

  • 2 tbsp Melted coconut butter

  • 1 tsp White vinegar

  • 2 tbsp Vanilla extract

  • Frosting
  • 230 gr Soft butter

  • 500 gr Powdered erythritol

  • 1 tbsp Vanilla

  • Toppings
  • 250 gr Fresh strawberries

  • Powdered erythritol

Directions

  • Preheat the oven to 320F and line a round 15-inch baking sheet with parchment paper.
  • In a bowl mix the eggs, erythritol, white vinegar and vanilla extract with a hand mixer. Mix for about 5 minutes until fluffy cream is achieved.
  • To the mixture gradually fold in the coconut flour keeping the mixture fluffy.
  • In a small bowl melt the coconut butter and add part of the cake mixture. Mix well and transfer back into the big bowl.
  • Once the mixture is ready transfer onto the baking sheet and bake at 320F for about 30 minutes. Let the cake cool off on a cooling rack.
  • In the meantime prepare the frosting by mixing everything with a hand mixer in a big bowl.
  • Serve with vanilla frosting, fresh strawberries and sprinkle with powdered erythritol.keto cake vanilla strawberry sponge
